Pear & Chocolate upside down cake

Pears, pears and more pears and all from the one tree. I don’t know how folk in olden times kept up with picking, pickling and preserving their crops but it’s exhausting! I’m turning my hand to a more immediate treat with this cake as reward for the last few weeks endeavours.


150g butter, 25g soft brown sugar, 225g pears (peeled, quartered and parboiled), 100g caster sugar, 2 eggs (beaten), 150g self raising flour, 25g cocoa powder or grated chocolate flakes.

1. Melt 25g of the butter and stir in the brown sugar. Use to coat the base of your cake tin which should be approx 20.5cm (8 inch).
2. Layer your pear quarters around the tin on top of the butter and sugar layer.
3. Cream the remaining butter and caster sugar until light and fluffy.
4. Beat in the eggs one at a time.
5. Fold in the flour and cocoa powder / chocolate and then spread the mix over the pears.
6. Bake at 180C for c. 1 hour until springy and so a cocktail stick comes out clean when inserted in the centre of the cake.
7. Leave to stand for 5-10 mins.
8. Turn out onto a plate.
