Left over Beef Bollito and potato curried soup

Quick and easy and perfect for a quick lunch. One of the best left overs of cooking Bollito (see my post on 31st oct) is that you are left with a rich stock and, if you’re lucky, some left over beef to create this tasty soup.

ingredients 1 litre meat stock, left over beef (shredded), 1 onion, 4 potatoes (cubed), cumin seeds, turmeric, madras powder, coriander powder, salt and pepper

preparation
1. Dice the onion and sweat in a large saucepan.
2. Add in the curry spice to taste. You can really use any quantity and combination depending on how spicy you like it.
3. Add in the diced potatoes and allow to colour in the spices for a couple of minutes.
4. Finally pour in the stock and add in the beef and bring to the boil.
5. Simmer for a minimum of 30 minutes until the potatoes are nicely softened. The starch in the potatoes with naturally help thicken the soup whilst cooking.
