Chocolate Tray Bake with Strawberries & Cream

British summer time + Wimbledon tennis = strawberries and cream in our household! Add in a chocolate tray bake and you have the makings of an even more luxurious treat for an afternoon tea in front of the tennis!


50g cocoa, 6 tbsp boiling water, 100g softened butter, 200g caster sugar, 3 eggs, 125ml milk, 175g self-raising flour, 1 tbsp baking powder

preparation: 15 mins + 25-30 mins baking

1. In a large mixing bowl blend the cocoa powder with the boiling water to form a smooth paste.
2. Beat in the sugar using a wooden spoon.
3. Add in all the remaining ingredients and beat until smooth. Use a whisk if you find it easier or alternatively you can mix in the blender with the correct cake blade.
4. Transfer into a square baking tray (lined with baking paper) and bake at 180C for 25-30 mins.

5. Turn out and leave to cool before removing the baking paper.


6. Dust with icing sugar and serve with strawberries and cream.
