Brunch – The ultimate weekend breakfast

Ingredients: Eggs & bacon with side of rocket, mushrooms and tomatoes, Fresh fruit and yoghurt, Cereals, Croissants, pancakes and anything else you fancy!

Preparation: 20 mins

There is nothing better than a saturday morning brunch (preferably al fresco) to kick start the weekend. See all the recipes below for some inspiration.

Classic scrambled eggs and streaky bacon (serves 2)

  • Break 4 eggs and a generous spoonful of creme fraiche into a bowl and beat.
  • Season with salt and paper to taste.
  • Heat a knob of butter in a small pan and add in egg mix.
  • Cook until starts to solidify but before it loses its moisture stirring occassionally. Try not to over stir as it breaks the mixture up too much and it risks looking curdled.
  • Meanwhile grill the streaky bacon until crispy.
  • Serve together with a round of hot toast and a side of rocket and fresh tomato.


Omlette with choice of filling; ham, mushroom, tomato

Ingredients: 2 eggs, 25ml milk, salt and pepper plus filling of choice (2-4 mushrooms, 1 sliced tomato, ham), oil

Preparation: 5 mins + 5 mins cooking

  • Break eggs into a bowl, beat in the milk, add salt and pepper to taste.
  • In a non-stick frying pan heat a splash of oil.
  • If using raw ingredients such as mushrooms cook for 1-2 minutes and then pour in egg mix. If using cooked ham add to pan at same time as egg mix.
  • Cook for a couple of minutes on a medium heat until the base is cooked and still slightly runny on top.
  • To finish pop under a hot grill for 1 minute to brown the top.



Ingredients:100g flour, 1 egg, 300ml milk, pinch if salt, butter or a light oil for frying

Preparation: 5 mins and 10 mins cooking

  • Sift the flour and salt into a bowl or jug.
  • Add the egg and half the milk and beat the mixture.
  • Pour in the rest of the milk and beat gently ujntil you have a smooth mixture.
  • Take a small frying pan and add a little butter or oilfor frying. Heat  well before adding a ladle of pancake mixture.
  • Cook until the pancake moves freely and then flip to cook on reverse side.
  • Repeat for the remaining pancakes.
  • Serve with lemon & sugar for a traditional English Pancake, with Nutella for an Italian twist or with maple syrup and fresh fruit.


Home-made Muesli & Fresh fruit

Ingredients: 1kg Mixed oats and cereals (as per preference), 150g cranberries, 150g sultanas, 150g mixed nuts, Mixed seeds (sunflower / pumpkin /

Preparation: 5 mins

There are really no rules for home-made muesli. You can pretty much mix together lots of different combinations of ingredients and get great results (and a few surprises!) every time.

  • Mix all ingredients together.
  • Store in an air tight container.
  • Serve with fresh fruit, milk or yoghurt as per preference.


Fresh Fruit Platter

Ingredients: Mix seasonal fruit

Preparation: 5 mins

  • Wash, peel and chop your fruit accordingly.
  • Eat au naturel or with yoghurt.


Grapefruit halves

Ingredient: Ruby red grapefruit or classic yellow, castor sugar

Preparation: 5 mins

  • Halve the grapefruit and sprinkle with a little castor sugar to counter the acidity of the fruit.
  • Eat with a serated spoon to scoop out each segement.
